Lentil & Spinach Stew with Chickpea Crepes

Chickpea Crepes

150g chickpea flour

1/2 tsp salt

1 plus 2/3 cups water

turmeric and seasonings of choice



Whisk all ingredients until combined. Fry in a very small amount of coconut oil.


Lentil and Spinach Stew



2 cups black lentils (or any kind really)

1 litre boiling water

Stock powder, turmeric and seasonings to taste

1 cup dried pocini mushrooms

3 cups chopped fresh spinach



Simmer all ingredients except spinach for 30-45 minutes. Add the spinach at the last minute and serve straight away.
