James’s Marvellous Cherry Peach Muffins

James had the idea of using cherries and peaches here but you can use any kind of dried, frozen or fresh fruit. This is adapted from Eat Up by Mark Hix, which is a very special family cookbook. It’s gone out of print, so nab a copy if you can.


220g soft butter

110g caster sugar

1 1/2 tablespoons honey

3 medium eggs

260g flour

4 teaspoons baking powder

150ml milk

3/4 cup dried peaches & cherries


Whip butter, sugar and honey together until creamy. Add the eggs and milk. Sift in the flour and baking powder and then stir in. Snip peaches and stir in the the fruit. Divide into 12 muffin cases and bake 20 minutes at 180c/350f.
