Mushroom & Kale 7 Vegetable Soup

After an afternoon tea in Dominique Ansel our sugar levels dropped and we were craving something nourishing and light. I strained this soup for the fussy one and served a side of plain pasta so the kids didn’t feel pressurised into eating the soup. In others words, I manipulated them into thinking it was their choice 😂


1 bunch kale – stalks removed

1 bunch spring onions or 1 leek

10 shallots or 3 onions

4 carrots

1 cup dried porcini mushrooms

1 potato

1 tin kidney beans

Vegetable stock powder – follow package instructions for amount (I add a bit extra)

2 litres boiling water


Chop shallot/onion, kale, spring onion/leek, carrots and potato. Fry shallot first until glassy then add kale until wilted and then add stock powder, rest of veggies and boiling water. Simmer 30 minutes to an hour. You can also leave it in the slow cooker all day.
