Protein Caramel Squares

These beauties are rich in protein, all-natural, nut-free, nutritious, high in fibre, and refined-sugar-free. For vegan, use nondairy chocolate; for gluten-free, use gluten free oats. I know this sounds perfect, but if you are going to eat 27 of these (like I could) you might as well eat a Kitkat.

Ingredients

2 cups oats

1/2 cup ground flax seeds

1 cup unsweetened protein powder (I used Pulsin Pea Protein)

1/2 cup brown rice syrup

1/2 cup coconut oil

32 medjool dates

1 tsp sea salt

1/2 cup maple syrup

2 cups dark chocolate chips

 

Method

For “shortbread” layer blend all ingredients except dates, maple syrup, salt and chocolate chips in a mixer. Press or roll down into a baking tin lined with greased paper. For caramel layer – squish 32 medjool dates to remove pips. Blitz in mixer with maple syrup and salt until smooth. Spread over shortbread layer. Set in freezer for 30 minutes. Melt chocolate chips and spread over caramel layer. Set for another 30 minutes and then slice into 24 squares.
